 Job Summary

Gallo’s  Premium Culinary Institute of America Internship (CIA)  Program has a select number of positions available for qualified candidates to fill 15 week internship positions at the wineries listed above. In this positon, you will have the opportunity to hone your culinary skills working alongside our culinary and consumer experience management teams, all set in beautiful wine country.

Duties include daily culinary support and assisting in direct to consumer events.   Successful candidates who complete the CIA Internship  Program will gain experience in culinary operations, special event catering, food and wine paring, food preparation, inventory maintenance and recipe development. Working closely with our teams, candidates hired under this program will have an opportunity to participate in the following (varies by location/assignment):


  • Engage in daily basic food prep, consistent plating, kitchen organization, and quality control.

  • Train in butchery, vegetable prep and rotate on hot line station. 

  • Support food prep for catering events.

  • Participate in winery kitchen opening and closing activities.

  • Work cross-functionally with departments across the Experiance Marketing Department

  • Support the kitchens efforts in managing health and safety code standards.

  • Maintain the overall cleanliness of kitchen and work station(s). 

  • Work at keeping kitchen waste to a minimum.

 Minimum Qualifications


  • High school diploma or State-issued equivalency certificate.

  • Currently enrolled in the Culinary Institute of America (CIA) OR Have obtained an Associate’s degree from the Culinary Institute of America.

  • Required to be 21 years of age  or older.

  • Requires availability to work evenings, weekends and holidays when necessary.

  • Knowledge of safety, sanitation and food handling procedures.

  • Skilled in food preparation.

  • Experience computing mathematical formulas and basic computer skills.

     

 Preferred Qualifications


  • Bachelor’s degree in Culinary Arts or Food Science.

  • Prior cellar, bottling, winemaking or wine tasting experience.

  • Possession of ServeSafe Certification.

  • Strong analytical and problem-solving skills.

  • Strong oral and written communication skills.

  • Excellent organizational skills with the experience managing multiple assignments.

     

 Physical Demands and Work Environment


  • Hot, wet and slippery  working conditions..

  • Frequently standing for long periods of time.  Applicant must be able to climb fixed stairs with handrails and vertical ladders .

  • Noise levels may vary. May be in situations where ear protection is required; though not for extended periods.
