Cook Job Description


Under the direction of the Chef/Production Manager or the Director, the Cook is responsible for cooking meals and providing food service to patients and is also responsible for both catering and retail foodservice.



  • Prepares all food items strictly adhering to CNS company recipes and designated production quantities as written on the “Daily Production Sheet.”

  • Must have a properly calibrated thermometer.

  • Maintains a clean and organized work area throughout the day and follows departmental cleaning, sanitation, and closing procedures.

  • Labels and dates all food items.

  • Breaks down and discards all cardboard boxes.

  • Assists management in any way that is conducive to the successful and efficient operation of the kitchen.

  • Adheres to Facility’s Emergency Preparedness Program, Occupational Safety and Health Administration (OSHA) standards, as well as other mandatory programs in the facility as appropriate.

  • Adheres to facility’s Policies and Procedures, including the confidentiality and Patient’s Rights Policies as outlined in the facility’s Policies and Procedures Manual.

  • Performs other tasks as may be assigned.

 


Ambassador Job Description


The main objective of the Ambassador role is to deliver meals, assist in patient menu selection, and cater to patient needs in a timely fashion. In addition, the Ambassador acts as the representative of the Food and Nutrition Services Department.


Mealtime Preparation



  • Prepares all cold/hot items and condiments for meal times according to quantities as written on the “Daily Production List.”

  • Focuses on presentation of patient trays—including meal accuracy and meal temperature—and ensures timely tray delivery.

  • Is responsible for patient satisfaction during the shift for the assigned floors.

 


Patient Menu Selection



  • Delivers and collects patient menus in a timely manner.

  • Keeps hot food hot and cold food cold during meal delivery.

  • Is responsible for meal accuracy and diet appropriateness while delivering patient trays.

  • Ensures all patients’ needs are catered to during the shift in between meal times.

  • Adheres to facility’s Emergency Preparedness Program, to Occupational Safety and Health Administration (OSHA) standards, as well as other mandatory programs in the facility as appropriate.

 


Utility Associate Job Description
The main objective of the Utility position is to maintain cleanliness and sanitize all pots, pans utensils, and equipment parts in a timely manner. In addition, this position is responsible for putting away deliveries in a timely manner.


Utility



  • Responsible for the general order and cleanliness of the kitchen, dining room, and storeroom. This includes sweeping and mopping.

  • Follows proper procedures when putting away deliveries, labeling and dating products and breaking down boxes.

  • Keeps all towels and soap dispensers clean and stocked throughout shift.

  • Transports ice from ice machine to the front end (drink counter) and to the salad counter as needed.

  • Maintains temperature log using T-sticks or recommended thermometer.

 


Dish/Pot Washing



  • Cleans and returns all pots, pans, china, flatware, trays, storage containers, other items, utensils, and equipment in a timely manner, following CNS standards and policies.

  • Sets up and maintains 3-compartment sink.

  • Changes water as needed and maintain proper levels of chemical additives to properly wash, rinse and sanitize items.

  • Checks soap supply and use test strip to be sure that correct amount of sanitizing agent is present.

  • Maintains a clean dish machine and monitors soap and rinse-additive supplies.

  • Replenishes dishes and dry trays to the counter in a timely manner.

 


Cleanliness and Sanitation



  • Follows standardized cleaning, safety, and sanitation procedures. Practices the “clean-as-you-go” philosophy.

  • Maintains floor and traffic areas by vacuuming, sweeping, mopping, and spot cleaning.

  • Follows departmental closing procedures.

  • Performs daily cleaning assignments.

  • Makes sure every area has clean trashcans in place. Discard all trash and empty cardboard bins.

 


Job Specifications



  • Must be at least 18 years old.

  • Education: At a minimum, a or GED or high-school degree.

  • Must have a minimum of 2 years experience in a hospital or hotel kitchen.

  • Must practice good personal hygiene and be neatly groomed in a company-approved uniform.

  • Must work well in a team-oriented environment.

  • Is capable of prolonged standing and walking continuously, frequent stooping, bending, and lifting up to 50 lbs.

  • Has sufficient manual dexterity to operate equipment necessary to perform essential functions of the job.
