Job Description:

The Restaurant Server (RS) is responsible for consistently delivering results that contribute to the mission and overall success of the hotel by accomplishing performance objectives covering the food service venues of the hotel. The Server sets-up, services, and breaks-down the food and beverage areas where they are assigned ensuring a high level of quality, consistency and service. Essential Elements: Ability to move freely within the restaurant and kitchen areas. Ability to bend, squat and reach on a continuous basis. Ability to walk and stand for prolonged periods of time. Ability to utilize standard restaurant equipment, (coffee machines, bread warmer, can opener, microwave). Ability to maintain the cleanliness of work station and to communicate any maintenance needed to keep equipment in good working order. Ability to push/pull carts weighing approximately 100 pounds. Ability to lift and carry a service tray weighing approximately 50 pounds, in the overhand style of service. Ability to lift, carry and store items weighing approximately 50 pounds in an overhead compartment. Ability to perform tasks requiring sustained repetitive motion and fine motor skills. Ability to work with chemicals, including cleaners and disinfectants. Ability to work in temperature extremes, including handling hot utensils and equipment. Ability to read and understand diagrams and count. Ability to perform basic arithmetic and the use of percentages. Ability to transact all tenders of payment accepted. Ability to understand and execute all safety and emergency procedures, i.e., fire, crowd control, inclement weather, bomb threats, and injuries. Ability to ensure that each guest receives prompt and efficient service. Ability to interact with guests and associates in a courteous, empathetic and discreet manner, with a professional attitude. Ability to communicate with guests and direct/escort them to various facilities/functions within the hotel. Ability to complete opening, running, and closing side work. Ability to remain in the dining room and service areas for extended periods of time. Ability to ensure that seating is properly rotated amongst the wait staff. Ability to assist in order taking and delivery of food and beverage. Ability to assist in prompt bussing and resetting of tables to Sonesta Hotel standards. Ability to monitor scheduling of personnel, providing adequate coverage for current and future shifts. Ability to comply with all Health Department standards. Ability to sustain direct contact with the public must establish high degree of customer service, (smile, eye contact, positive personal presentation, etc.) and high volume of interaction with guests and staff. Job Tasks: Stock food and beverage and restaurant supplies appropriate to forecasted business and Sonesta policies. Maintain high visibility for guests and staff, during meal periods. Establish and maintain the appropriate flow of food and beverage to guests. Ensure correct handling of all orders and collection of payment. Keep the dining room clean, neat, and attractive at all times. Assure the proper setting of tables. Move and arrange tables and chairs as directed by the manager or supervisor. Assure proper stocking, cleanliness, and neatness of service stations, including polished silverware, glassware, cups, saucers, plates, condiments, butter, creamers, pitchers, beverages, linen, etc. Complete opening, running, and closing side work to Sonesta standards. Follow proper ordering procedures. Welcome each guest with a smile, within three minutes of seating. Demonstrate knowledge of all products offered, to helpfully discuss details of food, such as cook time, temperature, ingredients/flavors, to ensure guest satisfaction. Demonstrate knowledge of all liquor, beer, wine, including pour sizes, brands available, and pricing. Take orders efficiently, suggesting appropriate condiments served simultaneously (or before). Serve food and drinks to correct guests without asking. Offer to bring additional beverages before cup/glass remains empty for more than three minutes. Discreetly inquire about guest satisfaction. Maintain an attentive presence in the dining room. Maintain a discreet non-intrusive manner. Maintain the dining room through prompt and precise resetting of the tables. Immediately remove soiled dishes, glasses silver, and linen to the dish area. Participate in restaurant/hotel promotions and practices. Communicate with management whenever opportunities occur (guest complaints, shortages of supplies and products, guest or associate injuries). Follow proper ordering and payment procedures. Collect and process payment within four minutes. Specifically thank guest and invite them to return Prepare and deliver accurate server reports, paperwork and cash owed.
