Job Description:

Job Summary:
Assist in Managing the day-to-day activities of the Dining Services with the Chefs and in the absence of the Chefs
 

Essential Functions of the Job:
•    Maintain neat and orderly facilities.
•    Set job assignment and priorities. 
•    With assistance from the dietitian and Dining Service Manager, trains healthcare staff for meal service.
•    Supervises kitchen staff in the absence of Sous Chef or Executive chef.
•    Keeps all Healthcare staff and regular Dining Services staff informed about changes and how they will affect them.
•    Ensure proper opening and closing procedures are followed.
•    Meet or exceed Lenbrook’s policies, state and federal regulations, sanitation, and safe food-handling techniques.
•    Maintain all records, including tray cards, diet and menu changes. 
•    Participate in dietary-related meetings and care-plan meetings. 
•    Inform the Dining Services Manager or dietitian (as appropriate) of any complaints, changes or procedures.
•    Provides feedback as needed to modify Healthcare menus for all diets; supervise cooks and preps to ensure menus are being followed.
•    Supervise completion of food and refrigeration temp sheets or any other regulatory postings. 
•    Checks refrigerators daily for proper food labels and dates.
•    Supervise clean and sanitized kitchen and surrounding areas.
•    Perform all other duties as assigned by authorized personnel.
 

Education and Experience Required:
•    Minimum five (5) years’ experience as a lead, supervisor or manager, managing at least 5 employees 
•    Culinary degree preferred or Certified Culinary Program completion 
•    Demonstrates understanding of dietary restrictions.
•    Serv Safe certification recommended. 
•    Must be able to read and write English and follow written and verbal directions at a level necessary to accomplish the job.
 

Skills and Aptitude Required:
•    Basic understanding of classic sauce making
•    Basic understanding of classic butchering skills
•    Basic understanding of classic international dishes 
•    Keep accurate books and follow accounting procedures
•    Strive to maintain high staff morale
•    Help handle customer complaints and criticisms in a positive, solution-oriented manner
