High school graduate or equivalent.


Two years of practical experience in meat processing with slaughter experience preferred.


Working knowledge of harvesting and meat processing equipment.


Physically capable of lifting a minimum of 50 lbs.


Must adopt the Sul Ross Meat Lab & Market Mission Statement of providing a hands-on state inspected space for students to learn meat processing, best practices for food safety, and butcher retail; supporting faculty research; and creating a wholesome food for our local community and the Big Bend region of Texas.

An Associates degree in a related field OR three years of practical experience in meat processing.

Assist the Meat Lab Manager in all duties including:


Procurement of livestock and supplies; harvesting; processing; sanitation; comply with state and federal regulations, inventory and production control; sales of products; marketing and promotion of products and services, management of inventory and sales software; maintenance of equipment. Responsible for personal safety and the safety of others; must exercise due caution and practice safe work habits at all times. Position is security sensitive.

Texas Law requires a 60 day waiting period before new state employees are eligible to enroll in health insurance.

Sul Ross State University Alpine Campus is in the Scenic Davis Mountains of West Texas, is a member of the Texas State University System, is accredited by the Commission on Colleges of the Southern Association of Colleges and Schools to award Associate, Bachelor's, and Master's degrees, and has an enrollment of approximately 2,000 students of campus in Alpine, Texas.
