The Senior Food Scientist will leverage knowledge related to ingredient, product formulation and food processing to explore, create and develop innovative confectionery products to build the innovation pipeline. This individual will provide technical expertise on new product development for product category growth and explore and institute advancements for the execution of new technical capabilities in breakthrough innovation.

Ways you will make a difference

• Leads project design and methodology for long-term development of sugar confectionery projects for the innovation pipeline, including design and execution of research and development, ingredient technology evaluation, sensory analysis, and identification of new process technologies.
• Fosters an innovative culture by actively participating in the ideation process and supporting building brands long-term innovation pipelines delivering rapid prototyping, concept screening, technical feasibility, and project execution through benchtop and/or pilot experimentation.
• Continuously research and vet advanced technologies that deliver product concepts aligned with the identified areas of strategic focus.
• Develop concepts in fuzzy front-end of innovation, translating consumer insights and brand strategy into potential product ideas
• Effectively scopes and evaluates new technology or technology application for innovation ideas through proof of concept research
• Consistently deliver concise, timely and complete reports of research activities, including communication of project status, issues, resolutions, and accountability leading to robust technical recommendations.
• Organize and manage complex test runs to evaluate or validate experimental formulas and document key data from lab benchtop and/or pilot trials and ensure handover preparedness for scale-up and commercialization.
• Partner with cross-functional team leads from R&D, quality and food safety in project execution, technology transfer and problem solving to ensure compliance with regulatory requirements from manufacturing to consumer use.
• Collaborate with process engineering team, procurement, vendors and ingredient suppliers in project execution, process technology evaluation, technology transfer and problem solving.
• Work closely with legal partners to preserve all forms of intellectual property generated from development activities by ensuring compliance to documentation requirements and protocols
• Able to create, manage, and coordinate complex scientific research projects
• Act as subject matter expert in areas of novel technical applications and newly developed product forms
• Provide leadership and support, being able to proactively influence in product & process technical aspects of innovation across existing brands
• Provide guidance to junior scientists or associates.
• Travels (up to 25% of job), both domestically and internationally including travel to Mexico
• Ensures adherence to all company policies and procedures

• Performs other duties as assigned
• Collaborate with the Manager to ensure full alignment on project initiatives, plans and next steps

Experiences that will support your success

• B.S. Food Science or related field required.
• M.S. in Food Science or related field preferred
• 3-5 years of relevant work experience in product development in the food industry, confectionery experience preferred
