SKANEATELES FIELDS RESORT & SPA is currently hiring for a Director of Food & Beverage Operations
Position Overview:
As the Director of Food and Beverage Operations, you will oversee all food and beverage operations across the resort. You will be responsible for maintaining exceptional guest experience, driving financial performance, and leading a high-performing team. This role demands strong leadership, refined taste, and a deep understanding of luxury service standards.
Responsibilities:
Develop and execute the F&B strategy aligned with the resort's vision and brand. Continuously innovate to elevate the dining experience.
Oversee the daily operations of all F&B outlets, including fine dining restaurants, bars, in room dining service, poolside service, and special culinary experiences.
Ensure a consistently exceptional, personalized guest experience that reflects the standards of a luxury resort.
Hire, train, and mentor a diverse team of managers, sommeliers, bartenders, and servers. Foster a culture of excellence, creativity, and teamwork.
Monitor expenses, analyze profit margins, and identify opportunities for revenue growth and cost efficiency.
Maintain the highest standards of food safety, sanitation, and presentation. Ensure compliance with all health, safety, and licensing regulations.
Collaborate with suppliers to source the finest ingredients and beverages, ensuring quality and consistency while managing costs.
Work closely with sales teams to execute seamless private dinners and other resort functions.
Collaborates closely with the Executive Chef on menu, drafting, design, and implementation.
Develop and oversee liquor and wine strategies, including wine, spirits, and beer programs.
Work closely with marketing teams to maximize food and beverage sales by identifying and targeting sales opportunities through marketing including promotions and special events and by training staff on "up-selling."
Qualifications:
Minimum 5-7 years of progressive leadership experience in luxury F&B operations
Proven success managing high-end restaurant
Exceptional knowledge of food, wine, spirits, and current culinary trends
Outstanding interpersonal, leadership, and communication skills
Experience in resort, hotel, or international hospitality environments preferred
