Responsible for the supervising of all aspects of the service Restaurant functions, in accordance with hotel standards. Directs, implements and maintains a service and management philosophy which serves as a guide to respective staff.
Ensures compliance with and completion of all daily operational procedures by the Food and Beverage Department:
1. Maintains food and beverage safety and quality based on hotel, Shaner, and Franchise specifications.
2. Be available to work a flexible schedule, including weekends, holidays, and varied shifts, as required to meet the needs of the Company’s business operations.
3. Establishes, maintains, and trains standards and procedures for operations and safe working conditions in the department.
4. Responsible for responding and handling guest related issues pertaining to the department.
• Ensures communication with General Manager, all other Department Managers, Supervisors and Staff.
• Manages all aspects of employee performance to ensure productivity and a quality work environment.
• Maintain complete knowledge of:
a) All liquor brands, beers and non-alcoholic selections available in restaurant.
b) The particular characteristics and description of every wine/champagne by the glass and major wines on the wine list.
c) Designated glassware and garnishes for drinks.
d) All menu items, preparation method/time, ingredients, sauces, portion sizes, garnishes, presentation and prices.
e) Daily menu specials, 86'd items.
f) Dining room layout, table/seat/station numbers, proper table set-ups, room capacity, hours of operation, price range and dress code.
g) P.O.S. and manual system procedures.
h) Daily house count, arrivals/departures; V.I.P.'s; scheduled in-house group activities, locations and times.
i) Correct maintenance and use of equipment.
j) All department policies/service procedures.
