The iconic Hotel del Coronado is looking for a talented, and flexible Chef Tournant ! It's an exciting time to join the resort with a recently completed $200M renovation project that included additional banquet space and major updates to our food and beverage offerings.

Located on Coronado Island just minutes from Downtown San Diego, this 28-acre property was built in 1888 and has over 700 rooms ( to include cottages and villas ), 65,000 square feet of banquet space, and 10 food and beverage outlets. This includ es 4 restaurants, 2 bars, food truck, marketplace, ice cream shop, and in-room dining.

In this role, you will rotate throughout multiple food & beverage outlets, as well as banquets, reporting directly to the Executive Sous Chef of the hotel. This is a great opportunity for a chef looking to learn and grow, build skills, and to be mentored by some of the most talented and dedicated culinarians in the industry.

A Chef Tournant is expected to have a wide variety of food knowledge since the daily duties of the position can change regularly. The ideal candidate will be an exceptional team player with a drive for innovation and a well rounded background in all cuisines. At least 2-3 years' supervisory experience in high-volume operations is required. Multi-unit and Union experience is a plus!

Assists Executive Chef and Executive Sous Chef in overall responsibility for activities of cooks and other personnel involved in preparing, cooking and presenting food in accordance with quality standards, productivity standards, cost controls, and forecast needs. Monitors team performance, product quality and production flow. Ensures compliance with health, safety, sanitation and alcohol awareness standards. Trains, supervises, schedules and assists in evaluating staff.

What will I be doing?


  • Visually inspects, selects and uses only the freshest fruits, vegetables, meats, fish and other food products of the highest standard in the preparation of all menu items. Reads and employs math skills for recipes. Approves requisitions for supplies and food items for production on work station.
  • Participates in production of all food items necessary for operation
  • Trains and supervises kitchen staff in the proper preparation of menu items, equipment and safety measures. Evaluate performance, give guidance and discipline as necessary to produce quality products.
  • Monitors to ensure proper receiving, storage, and rotation of food products so as to comply with Health Department regulations, including coverage, labeling, dating and placing items in proper containerss to ensure products freshness.
  • Assigns in detail, specific duties to all employees under supervision of Chef Tournant for efficient operation of kitchen and service.
  • Writes, maintains and updates all menu specifications, recipes and pictures, production forecasts, and ensures same are being followed.
  • In addition to performance of the essential functions, this position may be required to perform a combination of the following supportive functions, with the percentage of time performing each function to be solely determined by the supervisor based upon the particular requirements of the company.
  • Performs other duties as required, ie. special orders, buffet presentation, VIP parties, writing specialtymenus for promotions, etc.
  • Supervises daily cleaning, inventorying of walk-in and reach-in boxes.
