Job Description:

SUMMARY: Assists in maintaining good laboratory practices (GLP), and assists in maintaining the overall food safety and quality of product.

ESSENTIAL DUTIES AND RESPONSIBILITIES include, but are not limited to the following: (other duties may be assigned)

• Maintain accurate records to assure consistency of food safety and product quality, compliance to regulatory agency requirements and documentation of HACCP processes as it pertains to microbiological testing


• Prepare Microbiological growth media and other laboratory solutions to support microbiology laboratory testing.


• Maintain laboratory equipment and facilities.


• Perform testing to support daily microbiology, shelf life and R&D projects in accordance with laboratory SOPs and regulatory standards (USDA, FDA).


• Make detailed observations, documents results and performs data analysis.


• Demonstrate a consistently high level of quality of work.


• Utilize problem solving/ trouble shooting skills.


• Assure compliance testing for USDA E. coli process control


• Create and send reports to specified management personnel


• Monitor GMP's, and other aspects of food safety.


• Must be able to learn all areas of the Quality Assurance Laboratory.


• Must be highly self motivated, needing little supervision


• Has to be able to easily follow written or verbal directions


• Must be able to attain knife training certificate through Seaboard Foods Training program

QUALIFICATION REQUIREMENT: To perform this job successfully, an individual must be able to perform each essential duty satisfactorily. EDUCATION and/or EXPERIENCE: A high school diploma or GED is required. A two year or higher college degree is preferred. One or more years experience in meat processing, laboratory methodology or closely related industry is preferred.

AUTHORIZED TRAINING REQUIRED: Forklift / Pallet jack, Lockout / Tagout, Fall Protection, Humane Animal Handling, Product Reconditioning, Blood Borne Pathogens, and others as required by the Lab Supervisor.

LANGUAGE SKILLS: Ability to read and interpret documents in the English language such as safety rules, operating and maintenance instructions and procedure manuals. Ability to write routine reports and correspondence. Ability to effectively present information before groups of customers or employees of the organization. Bilingual skills in Spanish preferred.

MATHEMATICAL SKILLS: Ability to apply mathematical concepts to practical situations. Ability to perform necessary calculations for completion of reports and other written documents. Use of basic math is required; knowledge of statistical process control is helpful.

REASONING ABILITY: Ability to interpret a variety of instructions furnished in written, oral, diagram, or schedule form. Must be able to make decisions on routine matters utilizing company policies and procedures and directions from upper management.

PHYSICAL DEMANDS: The employee must frequently lift and/or move up to 50 pounds and occasionally lift and/or move more than 100 pounds. Specific vision abilities required by this job include close vision, distance vision, peripheral vision, depth perception, and the ability to adjust focus.

WORK ENVIRONMENT: While performing the duties of this job, the employee routinely works near moving mechanical parts and is exposed to wet, cold and/or humid conditions.

The noise level in the work environment is usually at a level where OSHA required hearing protection is required.

NORMAL WORK SCHEDULE: The hours and days of work are established by departmental needs and at the discretion of management. Must be available to work A or B shift when need or as assigned.
