Your day to day

As Restaurant Executive Sous Chef , you’ll direct kitchen activities and prepare our delicious food - helping create memorable experiences for guests - whenever and wherever they dine. Under the guidance and supervision of the Executive Chef you will oversee and assist the Executive Chef in all aspects of the culinary operation to ensure quality, kitchen maintenance, and inventory functions are kept to our high standards - to make sure the kitchen is always running smoothly.


DUTIES AND RESPONSIBILITIES:



  • Manages the functioning of all culinary associates, facilities, costs and contributes to the maximization of Food and Beverage departmental profit

  • Makes recommendations with respect to Food & Beverage promotions in order to achieve service delivery objectives

  • Specifies food product quantity and quality to the Purchasing Manager for efficient production and execution of culinary operations

  • Ensures the completion of purchasing lists in accordance with InterContinental Hotels Group’s quality and quantity standards. Inspects all perishable food items received for quality

  • Provides required tools, equipment and support to all associates for the smooth execution of production

  • Monitors and maintains food products delivered according to the Policies and Procedures Manual

  • Communicates fire, emergency and health and safety procedures in conformance with the laws having jurisdiction

  • Participates in pricing strategies when menus are reviewed to maintain departmental food costs

  • Participates in the reviewing and updating restaurant, bar, private dining and banquets menus

  • Assists with the developments of the budgets including operational expenditures to provide operating supplies, services and requirements necessary to meet established standards

  • Participates in the weekly, monthly and annual inventories for all kitchens & stewarding

  • Prepares all weekly payrolls and maintains all documents pertaining to the payroll and associates

What we need from you

QUALIFICATIONS


Essential:



  • Five (5) years of management experience in a Kitchen of an upscale Hotel and a free standing upscale Restaurant

  • Ability to satisfactorily communicate in English with guests, management and co-workers to their understanding

  • Ability to provide legible communication both in written and oral

  • Proven success with employee relations’ skills and ability to implement and maintain standards

  • College degree – Culinary Management three (3) year program


 


Desirable:



  • Computer training. (Word, Excel, PowerPoint)


 


SKILLS


Essential:



  • Ability to enforce hotel's standards, policies and procedures with Culinary Associates

  • Ability to prioritize and organize work assignments and delegate work

  • Ability to direct performance of staff and follow up with corrections where needed

  • Ability to lead and motivate staff and maintain a cohesive team

  • Ability to be a clear thinker, analyze and resolve problems exercising good judgment

  • Ability to focus attention of details

  • Ability to input and access information into on site computer systems

  • Ability to remain calm and courteous with demanding/difficult guests, associates and/or situations

  • Ability to perform job functions to standards under pressure

  • Ability to ensure security and confidentiality of guest and hotel information

  • Ability to move throughout the work areas

  • Ability to lift more than 20 lbs and bend

  • Ability to maintain a professional image according to InterContinental Hotels Group standards
