Job Description:

Position Summary:

Assists the Executive Chef and Executive Sous Chef in all food outlets and banquet events for the club. Supervising all back-of-the-house employees, from cooks to stewards.

Essential Responsibilities:

To perform this job successfully, an individual must be able to perform each essential duty satisfactorily.


  • Supervising all cooks and having knowledge of their day-to-day functions.

  • Assists in employee training and development to the full potential of each employee.

  • Creates menus and ensures proper execution.

  • Prepares or directly supervises kitchen staff responsible for the daily preparation of soups, sauces, menu items and specials to ensure proper cooking techniques and standards.

  • Ensures proper staffing for maximum productivity and high standards of quality. Keeping in mind all financial parameters that need to be met.

  • Prepares reports and schedules, costs menus, and performs other administrative duties as assigned by the Executive Chef.

  • Expedites food orders during peak service hours.

  • Submits ideas for future goals, operational improvements, and personnel management to the Executive Chef.

  • Ensure product availability on a daily basis for the production of menus and or events.

  • Makes recommendations for maintenance, repair, and upkeep of the kitchen and its equipment.

  • Ensures that high standards of sanitation, cleanliness, and safety are maintained throughout all kitchen areas at all times.

Knowledge and Skill Requirements:

Requires knowledge of all operations in a large club environment with particular emphasis on food & beverage operations. Must have strong interpersonal and management skills. Must have a vast knowledge of food products/preparation.

Education & Work Experience Requirements:


  • Undergraduate degree in or six years of Banquet Chef experience and/or training; or equivalent combination of education and experience.

While performing the duties of this job, the employee is rarely exposed to wet and/or humid conditions, fumes or airborne particles, extreme cold, and extreme heat.

The noise level in the work environment is usually moderate.
