Role Description

This is a full-time on-site role as a Service Director at 55 Seventy in Dallas, TX. The Service Director will be responsible for overseeing day-to-day FOH operations, ensuring member satisfaction, managing labor budgets, providing training and coaching, and leading our team in delivering exceptional service experiences.

Schedule: Full-time, Mon-Sat, Mornings/Afternoons/Evenings

Salary: From $80,000.00 per year

Responsibilities
  • Provide direction and oversight of the FOH team during AM and PM meal service periods.
  • Maintain FOH MOD assignments when away from club service areas and communicate to FOH staff.
  • Weekly and daily review, planning, and execution of Club Programming and Private Event BEOs.
  • Preparation of daily shift notes and lead daily pre-shift meeting.
  • Maintenance and distribution of up-to-date food and beverage training materials.
  • Maintenance and distribution of up-to-date FOH side work sheets.
  • Oversees adherence to company standards of service, production, employee productivity, product quality, uniforms and grooming, club cleanliness, and other FOH SOPs.
  • Ensures full compliance with TABC Safe Alcohol Service standards.
  • Provides performance-related feedback, coaching, and FOH employee development.
  • Delivery and documentation of coaching and progressive disciplinary action for FOH employees.
  • Creates, maintains, and audits fully compliant FOH employee files.
  • Prepares bi-weekly payroll, weekly FOH financials, and tip share spreadsheets.
  • Management of weekly FOH staff schedule.
  • Maintains weekly FOH labor spend within budgetary guidelines.
  • Maintains monthly BTG wine, liquor, and beer COGS within budgetary guidelines.
  • Troubleshoots service issues, FOH systems, and other operational problems with General Manager.
  • Coordinates recruiting, screening, interviewing, hiring, orientation, and training of new FOH staff.
  • Provide sommelier floor presence during service, including hand selling and advanced wine service.
  • Provide sommelier service for club programming, private events, wine dinners, and seated tastings.
  • Maintains correct ambiance by controlling lighting levels, music volume, and club cleanliness.
  • Responds to service complaints and executes guest recovery.
  • Maintains complete and accurate financial records of all restaurant sales transactions.
  • Maintains a poised, courteous, professional, friendly attitude to all club members and team members.
  • Maintain in-depth knowledge of current beverage offerings including wine, spirits, cocktails, and beers.
  • Maintain in-depth knowledge of current food menu offerings.
  • Assist with the evaluation and selection of wines and spirts for the beverage program.
  • Assist with periodic beverage inventory counts.
  • Assist with membership tours and handling of prospective member visits.

Qualifications
  • Fluently speaks, writes, and understands English.
  • Fine dining experience in excess of 5 years. (Required)
  • Restaurant management experience in excess of 3 years. (Required)
  • Experience in the private club industry is a plus
  • Ability to stand for the duration of meal service.
  • Ability to lift and carry 50 lbs.
  • Strong ability to multitask and maintain a calm, poised, and friendly demeanor during service.
  • Current proof of TABC Seller Training.
  • High-level working knowledge of food, wine, beers and proper service and sales techniques.
  • Exceptional service, team leadership, and training skills
  • Experience in managing budgets and ensuring customer satisfaction
  • Attention to detail and problem-solving abilities

Position has a target start date of July 1, 2024, but an immediate start could be accomdated if necessary
